Spicy Korean Seafood Soup with Shrimp and Mussels

Gochugaru-seasoned anchovy-kelp soup with raw shrimp, live mussels, Korean radish, cabbage, zucchini and mushrooms. Four light bowls. Approximate timings assume prepared broth, thawed shrimp and supplier-prepared live mussels; not personally kitchen-tested.

Ingredients
  

  • 4 cups prepared unsalted anchovy-kelp broth made ahead; check packaged product labels
  • 1 lb live mussels in their shells about 450 g; inspected, scrubbed and debearded; follow supplier purging instructions
  • 12 oz raw peeled and deveined shrimp about 340 g; thaw in refrigerator first if previously frozen
  • 1 tbsp neutral cooking oil for aromatics
  • 1 cup thinly sliced Korean radish or daikon about 4 oz
  • 1/2 medium onion thinly sliced
  • 1 cup chopped napa cabbage
  • 1 cup sliced zucchini about 1 small zucchini
  • 1 cup sliced mushrooms about 3 oz
  • 3 garlic cloves minced
  • 1 tsp fresh ginger grated
  • 1 tbsp pure gochugaru Korean chili flakes up to 1 extra tbsp to taste; single-ingredient seasoning
  • 2 scallions sliced, to finish
  • 1/2 tsp fine salt up to this amount, to taste after cooking
  • 1 tsp toasted sesame oil optional finishing oil; sesame allergen

Instructions
 

  • Check that the live mussels come from a reputable supplier. Discard broken-shell mussels and any open ones that do not close when tapped; scrub and debeard following supplier directions. Keep mussels and thawed raw shrimp refrigerated separately until their cooking stages; prepare and measure the vegetables.
  • Heat neutral oil over medium heat in a wide pot. Soften the onion for about 2 minutes, then briefly add minced garlic and grated ginger. Reduce the heat and stir in 1 tablespoon pure gochugaru for only 20 to 30 seconds without scorching.
  • Pour in 4 cups prepared unsalted anchovy-kelp broth. Add Korean radish and napa cabbage. Bring to a steady simmer and cook approximately 8 minutes, until the radish begins to soften. Add sliced zucchini and mushrooms; simmer another 4 to 5 minutes until nearly tender.
  • Add the prepared live mussels and cover the pot. Simmer until their shells open during cooking, checking after approximately 5 minutes and allowing longer as needed or according to supplier instructions. Discard any that remain closed after cooking. Move early-opened cooked mussels to a separate clean, covered bowl if necessary.
  • Add thawed raw peeled shrimp to the simmering broth. Cook approximately 2 to 4 minutes, or until their flesh is pearly and opaque throughout; continue if needed. Return any cooked mussels held separately to heat through briefly. Taste the fully cooked broth, adjust salt and gochugaru as needed and finish with scallions and optional toasted sesame oil. Serve immediately in clean bowls.

Notes

Prepared unsalted anchovy-kelp broth is required; stock preparation, refrigerator thawing and any supplier-required mussel purging are not included in prep/cook time. Buy live mussels from reputable suppliers; discard broken-shell/nonresponsive mussels before cooking and any that remain closed after cooking. Cook shrimp until pearly and opaque throughout. Keep raw and ready-to-eat foods separate and refrigerate perishable leftovers promptly (2 hours, or 1 hour above 90°F/32°C); reheat leftovers thoroughly to 165°F/74°C. Allergens: fish (anchovy), crustacean shellfish (shrimp), molluscan shellfish (mussels) and optional sesame. No cooking alcohol or alcoholic sauces; check all packaged broth/spice labels.
