- 2 ½ cups water
- 3 tbsp rice vinegar
- 1 tbsp sugar
- ½ tsp salt
- 12 oz salmon fillet
- ½ cup mayonnaise
- 2 tbsp sriracha
- 1 avocado sliced
- 1 sheet nori cut into strips
- 2 tbsp sesame seeds
- Green onions chopped, for garnish
Preheat oven to 375°F (190°C).
Rinse sushi rice under cold water until water runs clear. Cook rice with water (or in a rice cooker).
In a small bowl, mix rice vinegar, sugar, and salt; fold into cooked rice.
In a baking dish, spread sushi rice evenly.
Flake salmon over rice.
Mix mayonnaise and sriracha, then spread over salmon layer.
Bake for 15-20 minutes until salmon is cooked and top is slightly golden.
Remove from oven, top with avocado slices, nori strips, sesame seeds, and green onions.
Serve warm, slicing into squares for easy serving.
