- For the Salmon Quiche
- 1 prepared pie crust
- 6 oz cooked salmon flaked
- 4 large eggs
- ¾ cup heavy cream
- ½ cup shredded cheese Gruyère or Swiss
- 2 tbsp chopped fresh dill or parsley
- Salt to taste
- Black pepper to taste
- For the Shrimp Orzo
- 1 cup orzo pasta
- 8 oz shrimp peeled and deveined
- 1 tbsp olive oil
- 2 cloves garlic minced
- ¾ cup vegetable or chicken broth
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
Preheat oven to 375°F (190°C). Place the pie crust into a quiche pan and set aside.
In a bowl, whisk eggs, cream, salt, and pepper. Fold in salmon, cheese, and herbs.
Pour mixture into the crust and bake for 30-35 minutes, until set and lightly golden.
Meanwhile, cook orzo according to package instructions using broth instead of water.
In a saucepan, heat olive oil over medium heat. Add garlic and sauté briefly.
Add shrimp and cook until pink and opaque, about 2-3 minutes per side.
Stir cooked orzo and Parmesan into the shrimp. Season to taste.
