Ingredients
  

  • For the Salmon Quiche
  • 1 prepared pie crust
  • 6 oz cooked salmon flaked
  • 4 large eggs
  • ¾ cup heavy cream
  • ½ cup shredded cheese Gruyère or Swiss
  • 2 tbsp chopped fresh dill or parsley
  • Salt to taste
  • Black pepper to taste
  • For the Shrimp Orzo
  • 1 cup orzo pasta
  • 8 oz shrimp peeled and deveined
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • ¾ cup vegetable or chicken broth
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C). Place the pie crust into a quiche pan and set aside.
  • In a bowl, whisk eggs, cream, salt, and pepper. Fold in salmon, cheese, and herbs.
  • Pour mixture into the crust and bake for 30-35 minutes, until set and lightly golden.
  • Meanwhile, cook orzo according to package instructions using broth instead of water.
  • In a saucepan, heat olive oil over medium heat. Add garlic and sauté briefly.
  • Add shrimp and cook until pink and opaque, about 2-3 minutes per side.
  • Stir cooked orzo and Parmesan into the shrimp. Season to taste.
  • Slice quiche and serve warm with shrimp orzo on the side.

  • Swap shrimp for scallops if desired.
