Ingredients
  

  • 12 fresh oysters shucked
  • 2 cups fresh spinach chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup unsalted butter melted
  • 2 cloves garlic minced
  • 2 tbsp shallots finely chopped
  • 2 tbsp Pernod or white wine optional
  • 1 tsp lemon juice
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Preheat the oven to 450°F (230°C).
  • In a skillet, melt butter and sauté garlic and shallots until fragrant.
  • Add spinach and cook until wilted. Stir in breadcrumbs, Parmesan cheese, Pernod, lemon juice, salt, and pepper.
  • Place shucked oysters on a baking tray. Spoon the spinach mixture evenly over each oyster.
  • Bake in the preheated oven for 10-12 minutes, until the topping is golden and bubbly.
  • Garnish with fresh parsley and serve immediately.

Notes

  • Use the freshest oysters possible for best flavor.
  • Pernod or white wine is optional but adds depth of flavor.
  • You can prepare the topping mixture in advance to save time.
