- 12 fresh oysters shucked
- 2 cups fresh spinach chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup unsalted butter melted
- 2 cloves garlic minced
- 2 tbsp shallots finely chopped
- 2 tbsp Pernod or white wine optional
- 1 tsp lemon juice
- Salt and black pepper to taste
- Fresh parsley for garnish
Preheat the oven to 450°F (230°C).
In a skillet, melt butter and sauté garlic and shallots until fragrant.
Add spinach and cook until wilted. Stir in breadcrumbs, Parmesan cheese, Pernod, lemon juice, salt, and pepper.
Place shucked oysters on a baking tray. Spoon the spinach mixture evenly over each oyster.
Bake in the preheated oven for 10-12 minutes, until the topping is golden and bubbly.
Garnish with fresh parsley and serve immediately.
