Ingredients
  

  • 4 fillets of firm white fish e.g., snapper, grouper
  • 3 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 small onion finely chopped
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 2 tomatoes chopped
  • 2 tablespoons fresh lime juice
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions
 

  • Pat the fish fillets dry and season with salt, pepper, paprika, and oregano.
  • Heat olive oil in a large skillet over medium heat.
  • Sauté garlic and onion until fragrant and translucent.
  • Add bell peppers and cook for 3-4 minutes until slightly tender.
  • Stir in chopped tomatoes and lime juice, simmer for 5 minutes to create a flavorful sauce.
  • Place the fish fillets in the skillet, spooning the sauce over them. Cover and cook for 5-7 minutes until the fish is opaque and flakes easily.
  • Garnish with fresh cilantro or parsley and serve immediately with rice or warm tortillas.
