- 1/4 cup breadcrumbs or almond flour for low-carb
- 1 egg lightly beaten
- 2 tbsp fresh parsley chopped
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp olive oil for cooking
- For the Lemon Yogurt Sauce:
- 1/2 cup Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp olive oil
- Salt and pepper to taste

Prepare the Salmon: Chop salmon into small pieces or pulse in a food processor until coarsely ground.
