- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- 8 small corn or flour tortillas
- 1 cup shredded cabbage
- ½ cup diced red onion
- 1 avocado sliced
- 2 tbsp chopped cilantro
- For the Zesty Ginger-Lime Sauce:
- ¼ cup Greek yogurt
- 1 tbsp fresh lime juice
- 1 tsp lime zest
- 1 tsp grated fresh ginger
- 1 tsp honey
- Salt to taste
Prepare Sauce: In a small bowl, whisk together Greek yogurt, lime juice, lime zest, ginger, honey, and salt. Set aside.
