- 500 g white fish fillets cod or haddock, cut into strips
- 1 cup whole wheat breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs beaten
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- Lemon wedges for serving
Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
In a shallow bowl, mix flour, paprika, garlic powder, salt, and pepper.
Place the beaten eggs in another bowl and breadcrumbs in a third bowl.
Dredge each fish strip in the flour mixture, then dip in the eggs, and coat with breadcrumbs.
Place the fish fingers on the prepared baking tray and drizzle with olive oil.
Bake for 18-20 minutes, turning halfway, until golden and crispy.
Serve hot with lemon wedges and your favorite dipping sauce.
