Ingredients
  

  • 4 salmon fillets about 6 oz each
  • 2 tbsp olive oil
  • 3 tbsp fresh cilantro finely chopped
  • 2 cloves garlic minced
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp lime zest
  • ½ tsp ground cumin
  • Salt and black pepper to taste

Instructions
 

  • Prepare Marinade: In a bowl, whisk together olive oil, cilantro, garlic, lime juice, lime zest, cumin, salt, and pepper.
  • Marinate Salmon: Place salmon fillets in a dish, brush with marinade, and let sit for 10-15 minutes.
  • Preheat Grill: Heat grill or grill pan to medium-high. Lightly oil the grates.
  • Grill Salmon: Place salmon skin-side down on grill. Cook 4-6 minutes per side, until salmon flakes easily with a fork.
  • Serve: Garnish with extra cilantro and lime wedges. Serve warm.

Notes

  • For extra flavor, marinate salmon up to 1 hour in the refrigerator.
  • Pairs well with rice, quinoa, or a fresh salad.
  • If grilling outdoors, use a fish basket to prevent sticking.
  • Can also be cooked in the oven under the broiler.
