- 1 lb fresh salmon skin removed and finely chopped
- 1/3 cup crumbled feta cheese
- 1/4 cup red onion finely diced
- 2 cloves garlic minced
- 1/4 cup fresh dill chopped
- 1 tablespoon fresh parsley chopped
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1 large egg
- 1/3 cup breadcrumbs or almond flour
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 2 tablespoons olive oil for cooking
- Instructions
In a large bowl, combine chopped salmon, feta, red onion, garlic, dill, parsley, lemon zest, and lemon juice.
Add the egg, breadcrumbs, oregano, salt, and pepper. Mix gently until just combined.
Form the mixture into 8 evenly sized patties.
Heat olive oil in a skillet over medium heat.
Cook the patties for 5-6 minutes per side, or until golden brown and cooked through.
Remove from heat and rest for 2 minutes before serving.
Serve warm with tzatziki, lemon wedges, or a fresh Greek salad.
