Ingredients
  

  • 2 marlin fish steaks about 200 g each
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves minced
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley or oregano for garnish

Instructions
 

  • Pat the marlin steaks dry using paper towels.
  • In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and black pepper.
  • Brush the marinade over both sides of the marlin steaks.
  • Heat a grill pan over medium-high heat.
  • Grill the marlin for 3-4 minutes per side, until lightly charred and just cooked through.
  • Remove from heat and let rest for 1 minute.
  • Garnish with fresh herbs and serve immediately.

Notes

  • Do not overcook marlin, as it can become dry.
  • You can substitute marlin with swordfish or tuna if unavailable.
  • Serve with Greek salad, lemon potatoes, or steamed vegetables for a complete meal.
  • For extra flavor, add a splash of white wine or capers to the marinade.
