Ingredients
  

  • 2 halibut fillets 6-8 oz each
  • 3 tbsp unsalted butter
  • 2 cloves garlic minced
  • 2 tbsp fresh cilantro chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions
 

  • Preheat the grill or grill pan over medium-high heat.
  • Season the halibut fillets with salt and pepper.
  • In a small saucepan, melt the butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant. Stir in chopped cilantro and lemon juice. Remove from heat.
  • Place the halibut fillets on the grill. Cook for 4-6 minutes per side until the fish flakes easily with a fork.
  • Remove the halibut from the grill and drizzle with the cilantro garlic butter.
  • Serve immediately with lemon wedges on the side.

Notes

  • For a spicier version, add a pinch of red pepper flakes to the garlic butter.
  • Halibut can be substituted with cod, mahi-mahi, or sea bass.
  • Make the cilantro garlic butter ahead of time and store in the fridge; bring to room temperature before serving.
