Ingredients
  

  • 1 14.75 oz can of salmon, drained and flaked
  • 1 large egg
  • ½ cup breadcrumbs or crushed crackers
  • ¼ cup finely chopped onion
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons oil olive or vegetable for frying
  • Lemon wedges for serving

Instructions
 

  • In a large bowl, combine salmon, egg, breadcrumbs, onion, mayonnaise, mustard, and seasonings. Mix until well blended.
  • Shape the mixture into 6-8 small patties. If the mixture feels too wet, add a bit more breadcrumbs.
  • Heat oil in a skillet over medium heat.
  • Cook the patties for 3-4 minutes per side, or until golden brown and crispy.
  • Remove from the pan and drain on paper towels.
  • Serve warm with lemon wedges or your favorite dipping sauce.

Notes

  • For a lighter option, bake the croquettes at 400°F (200°C) for 15-20 minutes or air fry at 375°F (190°C) for 10-12 minutes.
  • Add diced bell pepper or parsley for extra flavor.
  • Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months.
