Ingredients
  

  • 2 cod fillets 6-8 oz each, fresh or thawed
  • 2 tablespoons sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce optional
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • 1 teaspoon lime or lemon juice
  • Salt and pepper to taste
  • Fresh scallions chopped (for garnish)
  • Sesame seeds for garnish
  • Optional: sautéed vegetables like bok choy carrots, or bell peppers

Instructions
 

  • Pat the cod fillets dry with paper towels. Season lightly with salt and pepper.
  • In a small pan, melt the sugar over medium heat until golden brown. Be careful not to burn it.
  • Add garlic and ginger, stirring for 30 seconds until fragrant.
  • Pour in soy sauce, fish sauce (if using), and lime juice. Stir gently to create the caramel sauce.
  • Heat olive oil in a non-stick skillet over medium-high heat.
  • Add the cod fillets and cook for 3-4 minutes per side, depending on thickness. Baste with caramel sauce during the last minute.
  • Remove fillets from the skillet and pour remaining caramel sauce over the fish.
  • Garnish with chopped scallions and sesame seeds. Serve immediately with rice or vegetables.
