Ingredients
  

  • For the Salmon & Glaze:
  • 4 salmon fillets skin-on or skinless
  • 1/4 cup bourbon adds a deep, caramelized flavor
  • 1/3 cup soy sauce
  • 3 tbsp honey
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp fresh grated ginger
  • 2 cloves garlic minced
  • 2 tsp sesame oil
  • For the Rice & Veggies:
  • 2 cups cooked jasmine or sushi rice
  • 1 cup steamed broccoli
  • 1/2 cup julienned carrots
  • 1/2 cup sliced bell peppers
  • Optional Garnish:
  • 1 tbsp sesame seeds
  • 2 tbsp chopped green onions
  • Pickled ginger to taste

Instructions
 

  • Step 1 - Prepare the Teriyaki Glaze
  • In a small saucepan over medium heat, combine bourbon, soy sauce, honey, brown sugar, rice vinegar, garlic, and ginger.
  • Simmer for 5-7 minutes until the mixture thickens slightly. Stir in sesame oil at the end.
  • Step 2 - Cook the Salmon
  • Preheat oven to 400°F (200°C).
  • Place salmon fillets on a parchment-lined baking sheet and brush generously with the glaze.
  • Bake for 12-15 minutes, depending on thickness, until the salmon flakes easily with a fork.
  • (Optional: pan-sear for 3-4 minutes per side for a crispier texture.)
  • Step 3 - Prepare the Rice & Vegetables
  • While the salmon cooks, steam or sauté the vegetables.
  • Prepare fluffy jasmine rice or sticky sushi rice as the base.
  • Step 4 - Assemble the Bowl
  • Scoop a portion of rice into each bowl.
  • Top with assorted vegetables and place one glazed salmon fillet on top.
  • Drizzle with any remaining teriyaki glaze.
  • Step 5 - Garnish & Serve
  • Sprinkle with sesame seeds, green onions, and pickled ginger (optional).

Notes

 
  • You can substitute bourbon with apple juice if you prefer a non-alcoholic version.
