Ingredients
  

  • For the Salmon
  • 1.5 to 2 lbs fresh salmon fillets skin removed
  • 2 tbsp olive oil or avocado oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp cayenne pepper adjust to taste
  • 1 tsp salt
  • ½ tsp black pepper
  • For the Mango Avocado Salsa
  • 1 ripe mango diced
  • 1 ripe avocado diced
  • ½ small red onion finely chopped
  • 1 small red bell pepper diced
  • 1 jalapeño seeded & minced (optional)
  • Juice of 1 lime
  • 2 tbsp fresh cilantro chopped
  • Salt & pepper to taste
  • For the Tacos
  • 8 small corn or flour tortillas
  • Optional: shredded cabbage extra cilantro, lime wedges, or Greek yogurt

Instructions
 

  • In a small bowl, combine smoked paprika, garlic powder, onion powder, oregano, cayenne, salt, and black pepper.
  • Brush salmon fillets with olive oil and coat with spice mix.
  • Heat a skillet or grill over medium-high heat. Cook salmon 3–4 minutes per side until cooked through (145°F/63°C).
  • While salmon cooks, prepare the salsa: mix mango, avocado, onion, bell pepper, jalapeño, lime juice, and cilantro. Season with salt and pepper.
  • Warm tortillas in a skillet or grill for 30–60 seconds per side.
  • Assemble tacos with salmon, salsa, and optional garnishes. Serve immediately.
