- 1½ lb 680 g large shrimp, peeled & deveined (tails on optional)
- 3 tbsp olive oil
- 2 tbsp fresh lime juice
- 1 tbsp fresh lemon juice
- 3 cloves garlic minced
- 1 tsp honey or maple
- ¾ tsp fine sea salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- ¼ tsp red pepper flakes optional
- 1 tsp lime zest
- 2 tbsp chopped cilantro
- 1 tbsp chopped parsley
- For serving: lime wedges extra cilantro
Make the marinade. In a bowl, whisk olive oil, lime & lemon juice, garlic, honey, salt, pepper, smoked paprika, red pepper flakes (if using), and lime zest. Stir in cilantro and parsley.
Marinate. Pat shrimp dry; add to the bowl and toss to coat. Marinate 15–20 minutes (no longer; acid will “cook” the shrimp).
Preheat grill. Heat grill or grill pan to medium-high (230°C/450°F). Oil the grates lightly.
Skewer. Thread shrimp onto skewers for easy flipping. Discard used marinade.
Grill. Cook shrimp 2–3 minutes per side until pink, opaque, and lightly charred. Do not overcook.
Rest & serve. Rest 1 minute. Slide off skewers, squeeze with lime, and shower with cilantro. Serve hot.
