Ingredients
  

  • lb 680 g large shrimp, peeled & deveined (tails on optional)
  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp fresh lemon juice
  • 3 cloves garlic minced
  • 1 tsp honey or maple
  • ¾ tsp fine sea salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • ¼ tsp red pepper flakes optional
  • 1 tsp lime zest
  • 2 tbsp chopped cilantro
  • 1 tbsp chopped parsley
  • For serving: lime wedges extra cilantro

Instructions
 

  • Make the marinade. In a bowl, whisk olive oil, lime & lemon juice, garlic, honey, salt, pepper, smoked paprika, red pepper flakes (if using), and lime zest. Stir in cilantro and parsley.
  • Marinate. Pat shrimp dry; add to the bowl and toss to coat. Marinate 15–20 minutes (no longer; acid will “cook” the shrimp).
  • Preheat grill. Heat grill or grill pan to medium-high (230°C/450°F). Oil the grates lightly.
  • Skewer. Thread shrimp onto skewers for easy flipping. Discard used marinade.
  • Grill. Cook shrimp 2–3 minutes per side until pink, opaque, and lightly charred. Do not overcook.
  • Rest & serve. Rest 1 minute. Slide off skewers, squeeze with lime, and shower with cilantro. Serve hot.

Notes

 
  • Flavor swaps: Replace lime with orange for a sweeter profile, or add ½ tsp cumin for warmth.
  • No grill? Broil on a foil-lined tray, 2–3 minutes per side on the top rack.
  • Heat control: Omit chili flakes for mild; add ½ tsp chipotle powder for smoky heat.
  • Frozen shrimp: Thaw overnight in the fridge or under cold water; pat very dry before marinating.
  • Food safety: Don’t reuse marinade that touched raw shrimp. If you want a basting sauce, reserve some before adding shrimp.
