Ingredients:
For the Egg Foo Young:
– 6 large eggs
– 1 cup bean sprouts
– 1/2 cup cooked shrimp or chicken, chopped
– 1/4 cup green onions, finely chopped
– 1/4 cup carrots, finely grated
– 1/4 cup peas (fresh or thawed frozen)
– 2 tablespoons soy sauce
– 1 teaspoon sesame oil
– 1/2 teaspoon garlic powder
– 1/4 teaspoon black pepper
– 2 tablespoons vegetable oil (for frying)
For the Gravy:
– 1 cup chicken broth
– 1 tablespoon soy sauce
– 1 tablespoon oyster sauce
– 1 teaspoon cornstarch mixed with 1 tablespoon water
– 1/2 teaspoon sesame oil

Directions:
1. Prepare the Egg Foo Young:
1. In a large bowl, beat the eggs thoroughly.
2. Add the bean sprouts, chopped shrimp or chicken, green onions, grated carrots, peas, soy sauce, sesame oil, garlic powder, and black pepper. Mix until well combined.
2. Cook the Egg Foo Young:
1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
2. Pour a ladleful of the egg mixture (about 1/4 cup) into the skillet, forming a small pancake. Cook for 2-3 minutes on each side, or until golden brown and cooked through.
3. Transfer the cooked Egg Foo Young to a plate and repeat with the remaining egg mixture, adding more oil as needed.
3. Prepare the Gravy:
1. In a small saucepan, combine the chicken broth, soy sauce, and oyster sauce. Bring to a simmer over medium heat.
2. Stir in the cornstarch mixture and cook until the gravy thickens, about 1-2 minutes.
3. Remove from heat and stir in the sesame oil.
4. Serve:
1. Place the cooked Egg Foo Young patties on a serving platter.
2. Pour the gravy over the top of the patties.
3. Garnish with additional chopped green onions if desired.
4. Serve hot, with steamed rice or your favorite side dish.
