Ingredients:
– 1 pound jumbo pasta shells
– 1 pound ground beef or turkey
– 1 packet (1 ounce) taco seasoning mix
– 1 can (14.5 ounces) diced tomatoes, drained
– 1 can (4 ounces) diced green chilies
– 1 cup salsa
– 1 cup shredded cheddar cheese
– 1 cup shredded Monterey Jack cheese
– 1/4 cup chopped fresh cilantro (optional)
– Sour cream, for serving
– Sliced green onions, for garnish (optional)

Directions:
1. Preheat the Oven:
– Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick spray.
2. Cook the Pasta:
– Cook the jumbo pasta shells according to the package instructions until they are al dente. Drain and set aside.
3. Prepare the Filling:
– In a large skillet, cook the ground beef or turkey over medium heat until browned and cooked through. Drain any excess grease.
– Add the taco seasoning mix, diced tomatoes, and diced green chilies to the skillet. Stir well to combine and simmer for 5 minutes.
4. Stuff the Shells:
– Spoon a generous amount of the taco meat mixture into each cooked pasta shell, filling them evenly.
– Place the stuffed shells in the prepared baking dish in a single layer.
5. Top with Sauce and Cheese:
– Pour the salsa evenly over the stuffed shells in the baking dish.
– Sprinkle the shredded cheddar cheese and Monterey Jack cheese over the top of the shells.
6. Bake:
– Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
7. Serve:
– Remove the foil from the baking dish.
– Garnish with chopped fresh cilantro and sliced green onions if desired.
– Serve the taco stuffed shells hot, with a dollop of sour cream on top if desired.
