French Onion Beef and Noodles

Ingredients:
– 1 pound beef sirloin or chuck, thinly sliced
– 2 tablespoons olive oil
– 1 large onion, thinly sliced
– 2 cloves garlic, minced
– 1 can (10.5 ounces) French onion soup
– 1 can (10.5 ounces) beef broth
– 1 tablespoon Worcestershire sauce
– 1 teaspoon dried thyme
– 8 ounces egg noodles
– 1 cup shredded Swiss or Gruyere cheese
– Salt and pepper, to taste
– Chopped fresh parsley, for garnish (optional)

Directions:
1. Heat the olive oil in a large skillet over medium-high heat. Add the thinly sliced beef and cook until browned, about 4-5 minutes. Remove the beef from the skillet and set aside.
2. In the same skillet, add the sliced onion and cook until caramelized, about 8-10 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
3. Return the beef to the skillet and add the French onion soup, beef broth, Worcestershire sauce, and dried thyme. Stir to combine.
4. Bring the mixture to a simmer and let it cook for about 10 minutes to allow the flavors to meld.
5. Meanwhile, cook the egg noodles according to the package instructions. Drain and set aside.
6. Add the cooked egg noodles to the skillet with the beef and onion mixture. Stir to combine and cook for an additional 2-3 minutes until everything is heated through.
7. Sprinkle the shredded Swiss or Gruyere cheese over the top of the beef and noodles. Cover the skillet and let it sit for a few minutes until the cheese is melted.
8. Season with salt and pepper to taste.
9. Garnish with chopped fresh parsley if desired, and serve hot.
