–  1/2 tsp baking soda
– 1 tsp salt
– 1 cup (240ml) whole milk, room temperature
– 1/2 cup (120ml) vegetable oil
– 2 large eggs, room temperature
– 2 tsp vanilla extract
– 1 cup (240ml) boiling water


For the Cherry Filling:
– 1 cup (200g) pitted sweet cherries (fresh or canned)
– 1/2 cup (100g) granulated sugar
– 1/4 cup (60ml) cherry juice or water
– 2 tbsp cornstarch mixed with 2 tbsp water (slurry)
– 2 tbsp Kirsch (cherry brandy) or 1 tsp almond extract (optional)


For the Whipped Cream:
– 2 cups (480ml) heavy whipping cream, chilled
– 1/2 cup (60g) powdered sugar
– 1 tsp vanilla extract


For Decoration:
– Chocolate shavings or curls
– Whole cherries (fresh or maraschino)



1.   Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line the bottoms of two 9-inch round cake pans with parchment paper.

2.   Prepare the Cake Batter: In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
